Ratatouille


If I had an international favorite dinner dish, it would be ratatouille. My mom first made it when the movie came out but as a soup.

This time around, I made it according to the Disney recipe with a few tweaks.

  1. 2 Red bell pepper

  2. 2 Green bell pepper

  3. 2 Orange bell pepper

  4. 2 Yellow bell pepper

  5. Eggplant small or big

  6. Zucchini

  7. Yellow squash

  8. Whole onion

  9. 3/4 cup of minced garlic

  10. Thyme 1 tbsp

  11. 2 small cans of tomato paste

  12. 3 tbsp of olive oil

Preheat oven to 375 and take out all pots and pans first otherwise they will get hot and you do not want to get burned. Get a dutch oven big or small. Dice the onion and thinly slice the vegetables. Layer the bottom with 2 cans of tomato paste, onion, and garlic. Alternating the veggies, place eggplant first, zucchini, yellow squash, red bell pepper, green bell pepper, orange bell pepper, and orange. Repeat until the veggies are spiraling towards the center of the pot. Which I did not do very well. So, bear with me. Place lid on the Dutch oven and put it in the oven for an hour.


And voila! Okay, so it's not the prettiest thing but it tasted spectacular!
